FISH TACOS

On that day - our wedding day - we had a lot to celebrate and be thankful for.

 

A friend of mine once said, "God refuses to waste our pain."

 

We pretty much could've had Kleenex sponsor at the rate the tears were flowin'. I actually don't know if there was a dry eye on the property.

 

Guaranteed there was something happening in the ceremony that would make you cry.

 

Four months prior, the doctors couldn't tell my family if I'd ever walk again, or know who I was. The very fact that Chels' love for me was not shaken at either of those possibilities is mind-blowing to me and so beautiful.

At the time of the wedding Max was two-and-a-half and the cutest kid I'd ever met. He's not my biological son, but that doesn't make a lick of difference to me. In my heart, and in my eyes, he is my son through and through. I met Chels when he was ten months old and we started dating a little bit later. This little ball of energy very quickly found a home in my heart.

 

There was a special part of the ceremony dedicated to Max and I. I read vows that I had written specifically for Maxy: I promised to always love him and take care of him while he made airplane noises into the microphone - it was the best!

 

 

I honestly could not imagine life without Max. Somedays I can barely keep up with him, but he is a constant inspiration to me and brings so much light and laughter to my life. Not everyone gets a wife and a son in the same day. We were an instafam.

Max just turned five and is in junior kindergarten. He loves all things Hot Wheels and LEGO. Spiderman is his favourite superhero, though, sometimes I'd argue that his favourite is the Hulk.

 

Any parents out there can relate #hulksmash

 

Can you guess what one of his fave dinners is?!

(and it's not Mac n' Cheese - or "Max-n-Cheese" as we like to call it.)

Fish Tacos! Sounds crazy, I know. But, I bet your kids will love them too. They are really good - even if you're not a fish person, give them a shot!

 

To be perfectly honest, I'm not a huge fan of fish, but I love these. Especially when they're topped with homemade cilantro-lime crema, guacamole, red cabbage slaw, and pico de gallo.
